Burgundy · Côte Chalonnaise
At the southern edge of the Côte Chalonnaise, in the appellation of Montagny, Aline Beauné produces quietly expressive Chardonnay of remarkable poise and clarity. Her vineyards are rooted in calcareous and marl-limestone soils on elevated, well-ventilated slopes.
Oak is used with great discretion, allowing citrus notes, white flowers and stone fruit to unfold alongside a mineral backbone. The wines offer immediate pleasure while retaining enough structure and energy to evolve gracefully over time. Discreet yet precise, a compelling voice for the Côte Chalonnaise's quiet potential.
Burgundy · Côte de Nuits
Born into the Gros family of Vosne-Romanée and married to François Parent of Pommard, Anne-Françoise Gros built her domaine from 1988 by uniting her family's vineyard heritage with the Parent estate. Today managed by their children Caroline and Mathias — a new generation carrying forward an elegant, quietly ambitious approach.
Holdings span Vosne-Romanée, Chambolle-Musigny and Pommard, with the crown jewel being 0.6 hectares of Richebourg adjacent to a plot belonging to the Domaine de la Romanée-Conti. Wines that are soft yet nobly structured, representing exceptional quality and a deep sense of family heritage.
Burgundy · Meursault
In the heart of the Côte de Beaune, Domaine Antoine Jobard is a quietly distinguished interpreter of Meursault's limestone-inflected terroirs. His vineyards encompass parcels of varying soil and exposition — from heavier clay-limestone flats to chalkier slopes conferring lifted acidity and mineral nuance.
Native yeasts, judicious barrel ageing and an élevage designed to build nuance rather than overt weight deliver Meursault that feels at once generous and elegant — layered citrus blossom, pear and honeyed orchard fruit, underpinned by fine mineral streaks and a seamless thread of acidity.
Champagne · Côte des Blancs
Aurélien Suenen's first love was basketball — he played and coached at semi-professional level before returning to the family domaine in 2008 when his father fell ill. Guided by his illustrious neighbours Pascal Agrapart and Anselme Selosse, Aurélien immersed himself in the philosophy of terroir-driven, minimal-intervention winemaking.
Based in Cramant, he made the bold decision to sell off his northern plots to focus entirely on his 3 hectares across the grand cru villages of Chouilly, Oiry and Cramant on the Côte des Blancs. A small but remarkably precise range of Chardonnay-driven Champagnes that reflect both the singular character of each lieu-dit and the quiet determination of the man behind them.
Champagne · Vallée de la Marne
Founded in 1787 — two years before the French Revolution — Déhu Père et Fils is one of Champagne's most historic yet discreet estates. Benoît Déhu, the eighth generation at the helm, returned to the family domaine after a formative experience at Bollinger, armed with a clear vision: to explore the full potential of his terroir through artisanal winemaking.
Working 1.70 hectares farmed biodynamically — part of it by horse — Benoît crafts Champagnes of rare precision and personality. Intense, urgent and energetic, driven by beautiful tension and fine minerality, with zero to minimal dosage.
Champagne · Montagne de Reims
At the intersection of tradition and expressive freedom stands Bérêche & Fils, one of Champagne's most respected grower estates. Based in Ludes, Raphaël and Vincent Bérêche craft wines of quiet intensity, structural finesse and rare depth across the Montagne de Reims.
Farmed sustainably on ancient chalk and limestone soils, native yeasts, extended lees ageing and restrained dosage allow the purity of fruit and the chalk's saline imprint to speak for themselves. Compelling when young and evolving gracefully with age.
Champagne · Massif de Saint-Thierry
Few producers in Champagne make a more compelling case for terroir-driven wine than Alexandre Chartogne. Based in Merfy, a historic village just fifteen minutes from Reims, Alex works a remarkable patchwork of chalk, clay, sandstone, limestone and sandy soils — geological complexity worlds apart from the more homogeneous Côte des Blancs.
Since taking over the family domaine in 2006, Alex has approached farming and winemaking as a continuous process of observation and refinement. His wines combine tension, salinity and mineral depth with remarkable energy and finesse.
Champagne · Côte des Blancs
Founded in 1986 by Eric Dhondt and Edith Grellet, the estate chose from the outset to bottle under its own name rather than sell to négociants. Adrien, their son, has taken the domaine to new heights by selecting individual parcels for ever more precise expressions of Chardonnay from the Côte des Blancs.
Adrien practices peasant farming — without herbicides or pesticides — drawing on organic and biodynamic principles. Since 2021, he ploughs his vines by horse. In the cellar, Burgundian barrels, indigenous yeasts and natural malolactic fermentation guide the work. The result: Champagnes of rare authenticity, faithful to their terroirs in Cramant and Cuis.
Burgundy · Gevrey-Chambertin
Rooted in history yet animated by a clear contemporary vision, Domaine Duroché is guided by Pierre Duroché, whose stewardship harmonises classical Burgundian values with precision viticulture. The estate's vineyards span some of Gevrey-Chambertin's most esteemed sites.
Restrained yields, nurtured soils and indigenous yeasts preserve the primary energy and mineral vitality of each site. The reds are marked by silky tannins and nuanced spice; a defining sense of place rewards thoughtful tasting. Wines that reveal themselves gradually, with poise and depth.
Burgundy · Chablis
Based in Courgis, south of Chablis, Domaine Pattes Loup is the personal project of Thomas Pico — one of the most thoughtful and uncompromising voices in contemporary Chablis. Working organically and biodynamically on classic Kimmeridgian limestone soils, rich in fossilised marine elements.
Native yeasts, extended élevage and neutral barrels replace the stainless steel typical of the region. The result is Chablis of rare intensity: citrus and orchard fruit intertwined with saline minerality, subtle oxidative notes and a tactile mouthfeel that unfolds slowly and gains complexity with age.
Burgundy · Côte d'Or
One of Burgundy's most respected expressions of subtlety and terroir fidelity, Domaine Pernot-Belicard blends generational knowledge with a refined contemporary approach — yielding wines that are elegant, incisive and deeply reflective of their origins.
Sustainably farmed with close attention to soil health. Native yeasts, calibrated maceration times and a restrained élevage prioritise clarity and texture over extraction. The whites reveal racy acidity and mineral tension; the reds offer silky tannins and an undercurrent of spice. Wines for those who seek the nuance beneath the surface.
Burgundy · Côte de Nuits
Founded in 1988 by Henry-Frédéric Roch, Domaine Prieuré-Roch holds a singular place in Burgundy — built on historic provenance, uncompromising vineyard work and a deeply personal vision of terroir expression. Twenty hectares spread across Gevrey-Chambertin, Vosne-Romanée, Vougeot, Nuits-Saint-Georges, Ladoix and Savigny-lès-Beaune.
The estate stewards three monopoles: Clos des Corvées, Clos des Varoilles and Clos Goillotte. Farmed organically and biodynamically — wines sought not for their volume but for their depth, energy and unmistakable identity.
Champagne · Montagne de Reims
Based in Villers-aux-Nœuds on the slopes of the Montagne de Reims, Emmanuel Brochet crafts Champagnes of quiet intensity and contemplative complexity. Precision in the vineyard, patience in the cellar, and an unwavering respect for the land.
Natural fermentations, extended lees ageing and minimal intervention allow each wine to find its own voice — grounded in saline tension and layered texture. Subtle floral lift, fine citrus notes and a persistent energy carry through to a long, composed finish. Wines that reveal their complexity slowly.
Burgundy · Côte de Beaune
Based in Pommard at the heart of the Côte de Beaune, Fanny Sabre took over her family estate at a young age and shaped a style defined by precision, restraint and unwavering respect for the individuality of each vineyard. Holdings extend across Pommard, Beaune, Volnay and Meursault, worked organically with low yields.
Native yeasts, gentle extraction and a carefully adapted élevage favour harmony over power. The reds reveal clarity of fruit and fine tannic grain; the whites offer freshness and mineral precision. One of Burgundy's most compelling small domaines.
Burgundy · Puligny-Montrachet
Based in Puligny-Montrachet, one of Burgundy's most revered villages for Chardonnay, Florence Cholet produces wines of discreet yet deeply authentic character. Her vineyards sit on classic limestone and clay-limestone soils — tension, linearity and mineral finesse rather than overt opulence.
Minimal intervention, natural fermentations, and oak used judiciously to support texture without overshadowing the wine's inherent precision. Chardonnay of quiet confidence — citrus, white flowers and stone fruit underpinned by a persistent chalky backbone and saline finish.
Champagne · Montagne de Reims
A third-generation vigneron based in Écueil, Frédéric Savart crafts Champagnes that balance precision, aromatic complexity and structural depth without artifice. His vineyards sit on the historic chalk slopes of the Montagne de Reims, where Pinot Noir dominates but Chardonnay and Pinot Meunier bring complementary texture.
Native yeasts, extended lees ageing and minimal dosage ensure purity and minerality remain at the forefront. Champagnes of elegant clarity: vibrant and compelling when young, yet structured enough to evolve gracefully with time.
Burgundy · Chambolle-Musigny
One of the Côte de Nuits' most quietly revered estates, Domaine Hudelot-Baillet translates Chambolle-Musigny's celebrated terroir into wines of subtle power and remarkable elegance. Planted on limestone-rich soils laced with fine marl, the vineyards yield Pinot Noir that privileges line and detail over force.
Careful fermentations, gentle extraction and a discreet élevage allow the wines to gain depth without sacrificing transparency. Floral aromatics, fine-grained tannins and remarkable purity — red fruits, rose petal and delicate spice over a quiet mineral tension.
Champagne · Montagne de Reims
Founded in 1956 in the village of Berru, at the cool northern edge of the Montagne de Reims, Champagne Jacques Picard remains a proudly independent, family-run estate. Each generation has refined a style that privileges clarity, freshness and quiet complexity over power.
Cooler and more wind-exposed than vineyards further south, Berru's parcels produce grapes of notable tension and aromatic finesse. Extended lees ageing, carefully monitored fermentations and measured dosage allow each wine to express its origin with transparency and poise.
Burgundy · Meursault
Valentin Jobard, nephew of the legendary François Jobard, brings a distinctly contemporary sensibility to Meursault's historic viticultural identity. His vineyards sit on some of the village's most expressive limestone and clay-limestone soils, worked with exacting care.
Indigenous yeasts, carefully calibrated élevage and oak used judiciously to support texture without masking site expression. Finely poised and articulate Meursaults — citrus zest, white flowers and stone fruit over a persistent chalky finish. Wines that honour tradition while speaking with a fresh, defined voice.
Champagne · Vallée de la Marne
In the cool, mineral-rich terroir of the Vallée de la Marne, Jérôme Prévost of La Closerie stands among the most evocative voices in modern grower Champagne. An uncompromising artisan who combines a deep reverence for place with an exacting commitment to natural viticulture.
Planted primarily to Pinot Meunier and farmed biodynamically, every decision in vineyard and cellar is made in service of the terroir. Wines of almost tactile expressiveness — layered textures, saline tension and a purity of fruit utterly connected to its origin.
Champagne · Côte des Blancs
In the heart of the Côte des Blancs, on the pure chalk and limestone soils of Avize — one of the region's most revered Grand Cru villages — La Rogerie crafts Champagnes of purity, finesse and crystalline tension.
Low yields, native yeasts, extended lees ageing and judicious dosage. The wines consistently showcase saline minerality, fresh citrus lift and a transparent sense of place. Elegant, energetic and nuanced, offering immediate appeal while rewarding patient cellaring with remarkable depth.
Burgundy · Vosne-Romanée
Nicole Lamarche has led the family domaine since 2006, carrying forward a Burgundian lineage dating back to 1740. The estate's crown jewel is La Grande Rue — a 1.65 hectare Grand Cru monopole, the second smallest in the Côte d'Or — whose history is intertwined with that of the Domaine de la Romanée-Conti.
Eleven hectares farmed organically. Harvests by hand; cold maceration, hydraulic pressing and 14 to 20 months of élevage precede bottling without fining or filtration. Among the most sought-after names in all of Burgundy.
Champagne · Vallée de la Marne
Rooted in Mareuil-sur-Ay, a village celebrated for its prime Pinot Noir vineyards, R. Pouillon & Fils is a distinguished family estate with generations of expertise in the Vallée de la Marne. Classic marl and chalk soils, where Pinot Noir achieves both ripeness and freshness.
Deliberate fermentations, extended lees ageing and dosage calibrated to emphasise clarity over sweetness. The resulting Champagnes are lively yet structured, marked by vibrant red fruit, saline lift and a persistent spine of acidity. Equally exciting in youth and rewarding with age.
Burgundy · Hautes-Côtes de Nuits
Before founding Recrue des Sens, Yann Durieux honed his craft at Domaine Prieuré-Roch — and the influence is unmistakable. Based in Villers-la-Faye, he farms old-vine parcels organically and biodynamically, with yields kept deliberately low and chemical inputs entirely absent.
Spontaneous fermentations, often with whole clusters, no additives, no corrective intervention, and no sulphur. Pinot Noir of silken texture, floral nuance and mineral depth; whites of saline tension and layered complexity. Produced in very small quantities — wines that challenge convention and reward patience.

Origin & Savoir-Faire
SŌWLS is a premium Añejo Cristalino tequila crafted in Arandas, in the red highlands of Los Altos de Jalisco, from Blue Weber agave matured for more than seven years. The piñas are slow-cooked in a traditional brick oven (horno), drawing out their sugars and the deep aromatics of the agave.
Produced by the Gran Dinastía family — heirs to six generations of tequilero craft — the spirit is then aged over three years in American oak before a precise charcoal filtration.
100% agave. No sugar. No additives. A Cristalino Añejo of origin, keeping the depth of the ageing while offering a cleaner reading of the agave.
From luminous daytime rituals to the immersive energy of the night — same liquid, one standard, made to suit every atmosphere.
The Crystalline Expression
On the nose, soft oak, vanilla and ripe banana open with elegance, lifted by subtle notes of dried fruit. On the palate, the texture is silky, structured around a balance of oak, light caramel and ripe fruit.
Made to be enjoyed neat, over ice, or worked into signature cocktails.
